Gooey Chocolate Chip Cookies


185g butter, softened
1 cup (200g) brown sugar
1/2 cup (100g) caster sugar
1 egg
1 egg yolk
2 cups (300g) plain flour, sifted
1/2 teaspoon baking powder, sifted
200g dark chocolate, coarsely chopped
** + 50g chocolate for topping

Method – Uhhh what do you do with these ingredients?

1. Preheat oven to 180C. Line 2 oven trays with baking paper.

2. Use an electric mixer to beat the butter and combined sugars in a medium bowl until pale and creamy. Add the egg and egg yolk and beat until well combined.

3. Add the flour and baking powder and stir with a wooden spoon until combined. Add the chocolate and stir to combine.

4. Roll 2 tablespoons full of mixture into a ball.* Place on the lined tray. Repeat with remaining dough. Bake in preheated oven for 12 minutes (or a further 5 minutes for a crisper biscuit). Remove from oven and set aside on the tray to cool.

Chef’s tips !

*It goes from a ball and flattens out into a cookie, so don’t put them too close to each other ! What we did was test a few to see how big and flat it got 🙂

**After testing our first batch we found that the chocolate chip parts were pretty much hidden within each cookie, and more would be so much better ! So what we did was, we stuffed more chocolate bits on the mixture after rolling them into balls and popping them into the oven. Result shown in the picture 🙂

***If you like the chocolate all melted and gooey and warm, let them cool down for a few minutes then eat them straight away ! Otherwise warm them up in a microwave for 30 secs when you want them warm 🙂
